Bean and Barley Stew

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, celery, and garlic and cook until the vegetables are soft, about 10 minutes.
  3. Add the vegetable broth and barley to the pot and bring to a boil.
  4. Reduce the heat to low, cover the pot, and simmer for 30 minutes.
  5. Add the beans to the pot and continue to simmer for another 15 minutes, or until the barley is tender.
