Bean and Barley Stew
A hearty and healthy stew made with beans, barley, and vegetables. Perfect for a cold winter's day.
Ingredients - Serves 6
- Salt and pepper - To taste
- Canned beans - 1 can, drained and rinsed
- Barley - 1 cup
- Vegetable broth - 6 cups
- Garlic - 2 cloves, minced
- Celery - 2 stalks, chopped
- Carrots - 2, chopped
- Onion - 1, chopped
- Olive oil - 1 tablespoon
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, celery, and garlic and cook until the vegetables are soft, about 10 minutes.
- Add the vegetable broth and barley to the pot and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes.
- Add the beans to the pot and continue to simmer for another 15 minutes, or until the barley is tender.
- Season with salt and pepper to taste before serving.
