BBQ Tempeh Sandwich

Ingredients - Serves 4
- Whole grain bread - 8 slices
- Tomato - 1, sliced
- Lettuce - 4 leaves
- Red onion - 1, thinly sliced
- Olive oil - 1 tablespoon
- Bbq sauce - 1 cup
- Tempeh - 8 ounces
Let's Get Started
- Slice the tempeh into thin strips and marinate in the BBQ sauce for at least 30 minutes.
- Heat the olive oil in a pan over medium heat.
- Add the tempeh to the pan and cook until it is heated through and the sauce has thickened, about 10 minutes.
- Toast the bread slices.
- Assemble the sandwiches by layering the lettuce, tomato, and BBQ tempeh on one slice of bread. Top with the second slice of bread.
- Repeat with the remaining ingredients to make four sandwiches.
- Serve immediately.
