BBQ Chicken Hashbrowns
A delicious and hearty dish combining the flavors of BBQ chicken with crispy hashbrowns.
Ingredients - Serves 4
- Green onions - 2, sliced
- Cheddar cheese - 1 cup, shredded
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Olive oil - 2 tablespoons
- Hashbrowns - 4 cups, frozen
- Bbq sauce - 1 cup
- Chicken breasts - 2, boneless and skinless
Let's Get Started
- Preheat the oven to 375°F.
- Place the chicken breasts in a baking dish and cover with the BBQ sauce. Bake for 20-25 minutes, or until the chicken is cooked through.
- While the chicken is cooking, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened.
- Add the hashbrowns to the skillet and cook until crispy and golden brown. Season with salt and pepper.
- Once the chicken is done, shred it with two forks and mix it into the hashbrowns.
- Top the hashbrowns with the shredded cheese and place the skillet in the oven. Bake for 5 minutes, or until the cheese is melted and bubbly.
- Garnish with the sliced green onions before serving.
