  1. In a large bowl, combine the flour, yeast, and salt. Gradually add the warm water, mixing until a dough forms.
  2. Knead the dough on a floured surface for about 10 minutes, until it is smooth and elastic. Cover and let rise for 1 hour.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, tomato, and garlic, and cook until softened.
  4. Add the ground meat to the skillet and cook until browned. Stir in the cumin, paprika, and coriander.
  5. Divide the dough into small balls and roll each one out into a circle. Place a spoonful of the meat mixture in the center of each circle, then fold the dough over to enclose the filling.
  6. Heat a skillet over medium heat. Cook each pita for about 3 minutes on each side, until golden brown.
