Batbout
Batbout is a traditional Moroccan pita that is often stuffed with various fillings. This recipe includes a delicious filling of ground meat and vegetables.
Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Coriander - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Garlic - 2 cloves, minced
- Tomato - 1, finely chopped
- Bell pepper - 1, finely chopped
- Onion - 1, finely chopped
- Ground meat - 1 cup
- Warm water - 3/4 cup
- Salt - 1/2 teaspoon
- Dry yeast - 1 teaspoon
- All-purpose flour - 2 cups
Let's Get Started
- In a large bowl, combine the flour, yeast, and salt. Gradually add the warm water, mixing until a dough forms.
- Knead the dough on a floured surface for about 10 minutes, until it is smooth and elastic. Cover and let rise for 1 hour.
- In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, tomato, and garlic, and cook until softened.
- Add the ground meat to the skillet and cook until browned. Stir in the cumin, paprika, and coriander.
- Divide the dough into small balls and roll each one out into a circle. Place a spoonful of the meat mixture in the center of each circle, then fold the dough over to enclose the filling.
- Heat a skillet over medium heat. Cook each pita for about 3 minutes on each side, until golden brown.
