Barbacoa Tacos
These slow-cooked, tender barbacoa tacos are a flavorful and satisfying meal.
Ingredients - Serves 6
- Onion - 1, chopped
- Cilantro - 1/2 cup, chopped
- Corn tortillas - 12
- Lime juice - 2 tablespoons
- Beef broth - 1 cup
- Salt and pepper - To taste
- Oregano - 1 tablespoon
- Cumin - 1 tablespoon
- Chipotle peppers in adobo sauce - 3 peppers
- Garlic - 4 cloves, minced
- Beef chuck roast - 3 pounds
Let's Get Started
- Season the beef with salt and pepper.
- In a blender, combine the garlic, chipotle peppers, cumin, oregano, beef broth, and lime juice. Blend until smooth.
