Banh Xeo

Banh Xeo is a crispy, stuffed rice pancake popular in Vietnam. 'Banh Xeo' means 'sizzling pancake'. The sound it makes when the rice batter is poured into the hot skillet gives it its name.

Ingredients - Serves 4

Let's Get Started

  1. In a bowl, mix rice flour, turmeric powder, coconut milk, water, green onions, and salt to make the batter. Let it rest for 15 minutes.
  2. Heat a non-stick pan over medium heat, add a bit of oil. Add a few slices of pork belly and shrimp. Cook until they turn pink.
  3. Pour a ladle of the batter into the pan, swirling it around to cover the surface of the pan. Cover and cook for 2 minutes.
  4. Uncover, add a handful of bean sprouts on one side of the pancake. Cover again and cook for another 2 minutes.
  5. Uncover, fold the pancake in half and cook for another minute to let it crisp up.
  6. Remove from the pan and repeat with the remaining ingredients.
  7. Serve the pancakes hot with Vietnamese dipping sauce (nuoc cham) and a side of fresh herbs.
