Banh It Tran
Banh It Tran is a traditional Vietnamese dish made with sticky rice flour and filled with savory ingredients.
Ingredients - Serves 4
- Fried shallots - For garnish
- Scallions - 2, thinly sliced
- Vegetable oil - 2 tablespoons
- Ground black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Sugar - 1 tablespoon
- Fish sauce - 2 tablespoons
- Shallots - 2, finely chopped
- Wood ear mushrooms - 50g, soaked and finely chopped
- Shrimp - 200g, peeled and deveined
- Pork belly - 200g, minced
- Sticky rice flour - 1 cup
Let's Get Started
- In a mixing bowl, combine the sticky rice flour with 1/2 cup of warm water. Knead until a smooth dough forms.
- In a separate bowl, mix together the minced pork belly, shrimp, wood ear mushrooms, shallots, fish sauce, sugar, salt, and ground black pepper.
- Divide the dough into small portions and flatten each portion into a round disc.
- Place a spoonful of the filling mixture onto the center of each disc. Fold the edges of the disc over the filling and seal to form a dumpling shape.
- Bring a pot of water to a boil. Cook the dumplings in batches for about 5-7 minutes, or until they float to the surface.
- Remove the cooked dumplings from the pot and drain.
- In a pan, heat the vegetable oil over medium heat. Add the scallions and sauté for 1-2 minutes.
- Add the cooked dumplings to the pan and stir-fry for another 2-3 minutes, until lightly golden.
- Serve the Banh It Tran hot, garnished with fried shallots.
