Banh Gio
Banh Gio is a Vietnamese steamed rice cake filled with ground pork and mushrooms.
Ingredients - Serves 6
- Banana leaves - 6 pieces, cut into squares
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Fish sauce - 2 tablespoons
- Shallots - 2, minced
- Dried mushrooms - 1/4 cup, soaked and chopped
- Ground pork - 1/2 pound
- Water - 2 cups
- Tapioca starch - 1/2 cup
- Rice flour - 2 cups
Let's Get Started
- In a mixing bowl, combine the rice flour, tapioca starch, and water. Stir until smooth.
- In a separate bowl, mix the ground pork, dried mushrooms, shallots, fish sauce, salt, and black pepper.
- Place a piece of banana leaf in a cupcake mold or small bowl to create a cup shape.
- Fill the cup with the rice flour mixture, leaving space for the filling.
- Add a spoonful of the pork and mushroom filling into the center of the cup.
- Fold the banana leaf over the filling to enclose it.
- Repeat the process for the remaining ingredients.
- Steam the banh gio cups for about 45-60 minutes, or until the rice cake is cooked and firm.
- Remove from the steamer and let cool slightly before serving.
- Serve warm with dipping sauce or soy sauce.
