Let's Get Started

  1. In a blender, combine the mackerel fillets, coconut milk, red chili peppers, lemongrass, galangal, shallots, garlic, turmeric powder, lime leaves, and salt. Blend until smooth.
  2. Transfer the mixture to a bowl and let it marinate in the refrigerator for 1 hour.
  3. Preheat the grill to medium heat.
  4. Place a spoonful of the otah mixture onto each banana leaf square and fold it into a parcel.
  5. Grill the otah parcels for about 10 minutes on each side, or until the banana leaves are charred and the otah is cooked through.
  6. Serve hot as an appetizer or with steamed rice as a main dish.
