Otah
Otah is a popular Southeast Asian dish made with fish paste, spices, and coconut milk, wrapped in banana leaves and grilled to perfection.
Ingredients - Serves 4
- Banana leaves - 8 pieces, cut into squares
- Salt - 1 teaspoon
- Lime leaves - 4, finely chopped
- Turmeric powder - 1 teaspoon
- Garlic - 3 cloves, minced
- Shallots - 4, finely chopped
- Galangal - 1 thumb-sized piece, grated
- Lemongrass stalks - 2, white part only, finely chopped
- Red chili peppers - 5, seeded and chopped
- Coconut milk - 1 cup
- Mackerel fillets - 500g
Let's Get Started
- In a blender, combine the mackerel fillets, coconut milk, red chili peppers, lemongrass, galangal, shallots, garlic, turmeric powder, lime leaves, and salt. Blend until smooth.
- Transfer the mixture to a bowl and let it marinate in the refrigerator for 1 hour.
- Preheat the grill to medium heat.
- Place a spoonful of the otah mixture onto each banana leaf square and fold it into a parcel.
- Grill the otah parcels for about 10 minutes on each side, or until the banana leaves are charred and the otah is cooked through.
- Serve hot as an appetizer or with steamed rice as a main dish.
