Baghrir
Baghrir, also known as Moroccan pancakes, are fluffy and spongy pancakes that are traditionally served with honey and butter.
Ingredients - Serves 4
- Butter - 2 tablespoons, melted
- Honey - 2 tablespoons
- Yeast - 1 teaspoon
- Warm water - 2 cups
- Salt - 1/4 teaspoon
- Baking powder - 1 teaspoon
- All-purpose flour - 1/2 cup
- Semolina flour - 1 cup
Let's Get Started
- In a large bowl, mix together the semolina flour, all-purpose flour, baking powder, and salt.
- In a separate small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until frothy.
- Pour the yeast mixture into the dry ingredients and whisk until well combined.
- Cover the bowl with a clean kitchen towel and let the batter rest for 30 minutes to allow it to rise.
- Heat a non-stick skillet or griddle over medium heat.
- Pour 1/4 cup of the batter onto the skillet and cook until bubbles form on the surface and the edges are set, about 2 minutes.
- Flip the pancake and cook for an additional 1-2 minutes until cooked through.
- Repeat with the remaining batter.
- Serve the baghrir warm, drizzled with honey and melted butter.
