Baghali Polo
Baghali Polo is a traditional Persian dish made with basmati rice, dill, and fava beans.
Ingredients - Serves 4
- Water - 4 cups
- Saffron - 1/4 teaspoon, dissolved in 2 tablespoons of hot water
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Butter - 4 tablespoons
- Onion - 1 medium, finely chopped
- Dill - 1/2 cup, chopped
- Fava beans - 1 cup, shelled
- Basmati rice - 2 cups
Let's Get Started
- Wash the rice under cold water until the water runs clear. Soak the rice in cold water for 30 minutes, then drain.
- In a large pot, melt 2 tablespoons of butter over medium heat. Add the chopped onion and sauté until golden brown.
- Add the soaked and drained rice to the pot and stir well to coat the rice with the butter and onions.
- Add the water, salt, and turmeric to the pot. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
- In a separate pot, bring water to a boil and blanch the fava beans for 2 minutes. Drain and set aside.
- In a small pan, melt the remaining 2 tablespoons of butter. Add the chopped dill and sauté for 2 minutes.
- Add the sautéed dill and blanched fava beans to the pot of rice. Mix gently to combine.
- Drizzle the saffron water over the rice and cover the pot with a clean kitchen towel, then put the lid on top to create a tight seal.
- Cook the rice on low heat for another 20 minutes, or until the rice is fully cooked and fluffy.
- Remove the pot from heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork before serving. Serve hot as a main course or as a side dish.
