Ingredients - Serves 8

Let's Get Started

  1. Preheat oven to 425°F (220°C). Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  2. In a large bowl, combine cornmeal, flour, sugar, baking powder and salt.
  3. In a separate bowl, mix together milk, eggs and butter. Stir milk mixture into the cornmeal mixture; mix well. Fold in the crumbled bacon.
  4. Pour batter into a greased 8 inch square baking dish. Bake in preheated oven for 20 to 25 minutes, or until a knife inserted into the center of the cornbread comes out clean.
