Bacon Cornbread
A delicious and savory cornbread packed with crispy bacon and a hint of sweetness.
Ingredients - Serves 8
- Butter - 1/4 cup, melted
- Eggs - 2
- Milk - 1 cup
- Salt - 1/4 teaspoon
- Baking powder - 4 teaspoons
- Sugar - 1/4 cup
- All-purpose flour - 1 cup
- Cornmeal - 1 cup
- Bacon - 6 slices
Let's Get Started
- Preheat oven to 425°F (220°C). Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- In a large bowl, combine cornmeal, flour, sugar, baking powder and salt.
- In a separate bowl, mix together milk, eggs and butter. Stir milk mixture into the cornmeal mixture; mix well. Fold in the crumbled bacon.
- Pour batter into a greased 8 inch square baking dish. Bake in preheated oven for 20 to 25 minutes, or until a knife inserted into the center of the cornbread comes out clean.
