Bacon Cheeseburger Soup
A hearty soup that combines the flavors of a bacon cheeseburger in a bowl.
Ingredients - Serves 6
- Salt and pepper - To taste
- Milk - 1 cup
- Cheddar cheese - 2 cups, shredded
- Potatoes - 2, peeled and diced
- Chicken broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Ground beef - 1 pound
- Bacon - 6 slices, chopped
Let's Get Started
- In a large pot, cook the bacon until crispy. Remove the bacon and set aside, leaving the grease in the pot.
- Add the ground beef to the pot and cook until browned. Remove the beef and set aside.
- In the same pot, add the onion and garlic and cook until the onion is translucent.
- Add the chicken broth and potatoes to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are tender.
- Add the cooked bacon and beef back into the pot.
- Stir in the cheese until melted, then add the milk. Season with salt and pepper.
- Serve the soup hot, garnished with extra bacon and cheese if desired.
