Bacon and Potato Soup
A hearty and comforting soup made with bacon, potatoes, and vegetables.
Ingredients - Serves 6
- Green onions - 2 tablespoons, chopped
- Cheddar cheese - 1 cup, shredded
- Salt and pepper - To taste
- All-purpose flour - 1/4 cup
- Milk - 2 cups
- Chicken broth - 4 cups
- Potatoes - 4 medium, peeled and diced
- Celery - 2 stalks, diced
- Carrots - 2 medium, diced
- Onion - 1 medium, diced
- Bacon - 8 slices, chopped
Let's Get Started
- In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon grease in the pot.
- Add the diced onion, carrots, and celery to the pot. Cook until the vegetables are tender, about 5 minutes.
- Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are cooked through, about 15 minutes.
- In a separate bowl, whisk together the milk and flour until smooth. Slowly pour the milk mixture into the pot, stirring constantly.
- Continue to cook the soup over medium heat until it thickens, about 5 minutes. Season with salt and pepper to taste.
- Remove the pot from the heat and stir in the shredded cheddar cheese until melted and creamy.
- Serve the soup hot, topped with the crispy bacon and chopped green onions.
