Bacon and Potato Soup

Ingredients - Serves 6

Let's Get Started

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon grease in the pot.
  2. Add the diced onion, carrots, and celery to the pot. Cook until the vegetables are tender, about 5 minutes.
  3. Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are cooked through, about 15 minutes.
  4. In a separate bowl, whisk together the milk and flour until smooth. Slowly pour the milk mixture into the pot, stirring constantly.
  5. Continue to cook the soup over medium heat until it thickens, about 5 minutes. Season with salt and pepper to taste.
  6. Remove the pot from the heat and stir in the shredded cheddar cheese until melted and creamy.
  7. Serve the soup hot, topped with the crispy bacon and chopped green onions.
