Bacon and Pea Risotto

Ingredients - Serves 4

Let's Get Started

  1. In a large saucepan, cook the bacon over medium heat until crispy. Remove from the pan and set aside.
  2. In the same pan, add the onion and garlic and cook until the onion is soft.
  3. Add the Arborio rice to the pan and stir to coat in the onion and garlic mixture.
  4. Add the white wine to the pan and stir until it is absorbed by the rice.
  5. Gradually add the chicken broth, one cup at a time, stirring constantly until the broth is absorbed before adding the next cup.
  6. Once all the broth has been added and absorbed, stir in the frozen peas and cook until they are heated through.
  7. Remove the pan from the heat and stir in the Parmesan cheese and cooked bacon. Season with salt and pepper to taste.
  8. Serve the risotto hot, garnished with extra Parmesan cheese if desired.
