Bacon and Pea Risotto
A creamy, savory risotto with crispy bacon and sweet peas. Perfect for a comforting dinner.
Ingredients - Serves 4
- Salt and pepper - To taste
- Parmesan cheese - 1/2 cup, grated
- Frozen peas - 1 cup
- Chicken broth - 4 cups
- White wine - 1/2 cup
- Arborio rice - 1 cup
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Bacon - 4 slices, chopped
Let's Get Started
- In a large saucepan, cook the bacon over medium heat until crispy. Remove from the pan and set aside.
- In the same pan, add the onion and garlic and cook until the onion is soft.
- Add the Arborio rice to the pan and stir to coat in the onion and garlic mixture.
- Add the white wine to the pan and stir until it is absorbed by the rice.
- Gradually add the chicken broth, one cup at a time, stirring constantly until the broth is absorbed before adding the next cup.
- Once all the broth has been added and absorbed, stir in the frozen peas and cook until they are heated through.
- Remove the pan from the heat and stir in the Parmesan cheese and cooked bacon. Season with salt and pepper to taste.
- Serve the risotto hot, garnished with extra Parmesan cheese if desired.
