  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside.
  2. In the same pot, add the chopped onion and cook until it becomes translucent.
  3. Add the minced garlic to the pot and cook for another minute.
  4. Add the chopped collard greens to the pot and stir until they start to wilt.
  5. Pour in the chicken broth, apple cider vinegar, and season with salt and pepper. Stir everything together.
  6. Cover the pot and reduce the heat to low. Let it simmer for about 45 minutes, or until the greens are tender.
  7. Crumble the cooked bacon and sprinkle it over the greens before serving.
