- Parsley - 2 tablespoons, chopped
- Hard-boiled eggs - 2, sliced
- Black olives - 1/2 cup
- Olive oil - 4 tablespoons
- Garlic - 2 cloves, minced
- Onions - 2, thinly sliced
- Potatoes - 4 large, peeled and sliced
- Salted cod - 500 grams, soaked in water overnight, drained
Let's Get Started
- Preheat the oven to 350°F (175°C).
- Boil the cod and potatoes in separate pots until they are both tender. Drain and set aside.
- In a large frying pan, heat the olive oil over medium heat. Add the onions and garlic and cook until they are soft and golden.
- Flake the cod into pieces and add it to the pan with the onions and garlic. Cook for a few minutes, then add the potatoes and mix well.
- Season with salt and pepper, then transfer the mixture to a baking dish.
- Top with the sliced hard-boiled eggs and olives.
- Bake for 20 minutes, or until the top is golden and crispy.
- Garnish with chopped parsley before serving.
