Bacalhau À Brás
Bacalhau à Brás is a traditional Portuguese dish made with salt cod, onions, potatoes, eggs, and olives.
Ingredients - Serves 4
- Salt and pepper - To taste
- Parsley - 1/4 cup, chopped
- Black olives - 1/2 cup, pitted and sliced
- Eggs - 4, beaten
- Potatoes - 2 large, peeled and cut into matchsticks
- Garlic - 2 cloves, minced
- Onion - 1 large, thinly sliced
- Olive oil - 1/2 cup
- Salt cod - 1 pound, soaked overnight
Let's Get Started
- Preheat the oven to 350°F.
- Boil the salt cod for 5 minutes, then drain and flake it into small pieces.
- Heat the olive oil in a large skillet over medium heat.
- Add the onions and garlic and cook until the onions are soft and golden, about 10 minutes.
- Add the potatoes and cook until they are tender, about 10 minutes.
- Add the flaked cod and cook for 5 minutes, stirring occasionally.
- Add the beaten eggs and stir until they are cooked through, about 5 minutes.
- Season with salt and pepper to taste.
- Transfer the mixture to an oven-safe dish and bake for 10 minutes.
- Garnish with sliced olives and chopped parsley before serving.
