Avocado, Kale, and Quinoa Salad
A healthy and delicious salad packed with nutrients and flavor.
Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Lemon - 1, juiced
- Avocado - 1, diced
- Kale - 4 cups, chopped
- Water - 2 cups
- Quinoa - 1 cup
Let's Get Started
- Rinse the quinoa under cold water until the water runs clear.
- In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover and simmer until quinoa is tender and water has been absorbed, about 15 minutes.
- While the quinoa is cooking, chop the kale and dice the avocado.
- In a large bowl, combine the cooked quinoa, kale, and avocado.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately, or refrigerate until ready to serve.
