Avocado, Kale, and Quinoa Salad

Ingredients - Serves 4

Let's Get Started

  1. Rinse the quinoa under cold water until the water runs clear.
  2. In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover and simmer until quinoa is tender and water has been absorbed, about 15 minutes.
  3. While the quinoa is cooking, chop the kale and dice the avocado.
  4. In a large bowl, combine the cooked quinoa, kale, and avocado.
  5. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Serve immediately, or refrigerate until ready to serve.
