Asopao de Pollo
Asopao de Pollo is a traditional Puerto Rican chicken and rice stew, packed with flavor and hearty ingredients.
Ingredients - Serves 6
- Salt and pepper - To taste
- Frozen peas - 1 cup
- Rice - 1 cup
- Adobo seasoning - 1 tablespoon
- Sazon seasoning - 1 packet
- Cilantro - 1/4 cup, chopped
- Sofrito - 1/4 cup
- Chicken broth - 4 cups
- Tomato sauce - 1 cup
- Green bell pepper - 1, diced
- Red bell pepper - 1, diced
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
- Chicken - 1 whole, cut into pieces
Let's Get Started
- In a large pot, heat the olive oil over medium heat.
- Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the onion, garlic, red bell pepper, and green bell pepper. Cook until the vegetables are softened.
- Add the tomato sauce, chicken broth, sofrito, cilantro, sazon seasoning, and adobo seasoning. Stir to combine.
- Return the chicken to the pot and bring the mixture to a boil.
- Add the rice and frozen peas. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the chicken is tender.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
