Artichoke and Leek Frittata

Ingredients - Serves 4
- Parmesan cheese - 1/2 cup, grated
- Salt and pepper - To taste
- Milk - 1/4 cup
- Eggs - 6
- Garlic - 2 cloves, minced
- Artichoke hearts - 1 cup, chopped
- Leeks - 2, thinly sliced
- Olive oil - 2 tablespoons
Let's Get Started
- Preheat the oven to 375°F.
- Heat the olive oil in a large oven-safe skillet over medium heat.
- Add the leeks and cook until soft, about 5 minutes.
- Add the artichoke hearts and garlic and cook for another 2 minutes.
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- Pour the egg mixture over the leeks and artichokes in the skillet.
- Sprinkle the Parmesan cheese on top.
- Transfer the skillet to the oven and bake for 20 minutes, or until the frittata is set and golden.
