Ingredients - Serves 6
- Salt and pepper - To taste
- Parmesan cheese - 1/2 cup, grated
- Mozzarella cheese - 1 cup, shredded
- Cooked chicken - 1 cup, shredded
- Cooked ham - 1 cup, diced
- Tomatoes - 2, chopped
- Bell peppers - 2, chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Long grain rice - 2 cups
Let's Get Started
- Preheat the oven to 350°F.
- Cook the rice according to package instructions and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, bell peppers, and tomatoes. Cook until the vegetables are soft, about 5 minutes.
- Add the cooked ham and chicken to the skillet and stir to combine. Season with salt and pepper.
- In a large baking dish, layer half of the rice, followed by half of the vegetable and meat mixture, and half of the mozzarella cheese. Repeat the layers, ending with the mozzarella cheese.
- Sprinkle the top with the grated Parmesan cheese.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
