Arroz Con Gandules
Arroz con Gandules is a traditional Puerto Rican rice dish made with pigeon peas, rice, and a flavorful sofrito.
Ingredients - Serves 6
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Water - 3 cups
- Long-grain white rice - 2 cups
- Pigeon peas - 1 can (15 ounces), drained and rinsed
- Sazon seasoning - 1 packet
- Tomato sauce - 1/4 cup
- Sofrito - 1/2 cup
- Cilantro - 1/4 cup, chopped
- Green bell pepper - 1, finely chopped
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Olive oil - 2 tablespoons
Let's Get Started
- In a large pot, heat the olive oil over medium heat.
- Add the onion, garlic, and green bell pepper. Cook until the vegetables are softened, about 5 minutes.
- Add the cilantro, sofrito, tomato sauce, and sazon seasoning. Stir to combine.
- Add the pigeon peas and cook for another 2 minutes.
- Add the rice, water, salt, and black pepper. Stir well.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let the rice rest for 5 minutes before fluffing with a fork.
- Serve hot and enjoy!
