Arrot and Tarragon Soup
A vibrant and flavorful soup that combines the sweetness of carrots with the aromatic flavor of tarragon.
Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 1 tablespoon
- Fresh tarragon - 2 tablespoons, chopped
- Vegetable stock - 1 liter
- Garlic - 2 cloves, minced
- Onion - 1 large, chopped
- Carrots - 500 grams, peeled and chopped
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
- Add the carrots and cook for another 5 minutes, until they start to soften.
- Add the vegetable stock and bring to a boil. Reduce the heat and simmer for 20 minutes, or until the carrots are completely soft.
- Remove from the heat and add the tarragon. Use a blender to puree the soup until smooth.
- Return the soup to the heat and season with salt and pepper. Serve hot.
