Arrot and Tarragon Soup

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
  3. Add the carrots and cook for another 5 minutes, until they start to soften.
  4. Add the vegetable stock and bring to a boil. Reduce the heat and simmer for 20 minutes, or until the carrots are completely soft.
  5. Remove from the heat and add the tarragon. Use a blender to puree the soup until smooth.
  6. Return the soup to the heat and season with salt and pepper. Serve hot.
