Arrollado Huaso
Arrollado Huaso is a traditional Chilean dish made from pork. It's a rolled pork roast, typically served with pebre, a Chilean condiment made from coriander, chopped onion, olive oil, garlic and ground or pureed spicy aji peppers.

- Cooking twine - As needed
- Pork skin - 1 large piece
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Cumin - 1 teaspoon
- Oregano - 1 tablespoon
- Garlic - 4 cloves, minced
- Pork shoulder - 2 pounds
Let's Get Started
- Preheat the oven to 350°F (175°C).
- Cut the pork shoulder into thin slices. Season with the minced garlic, oregano, cumin, salt, and black pepper.
- Lay out the pork skin and arrange the seasoned pork slices on top. Roll up tightly and secure with cooking twine.
- Place the roll on a baking sheet and bake for about 2 hours, or until the pork is cooked through and the skin is crispy.
- Let the pork roll rest for a few minutes before slicing. Serve with pebre or your favorite sauce.
