Arepas de Choclo
Arepas de Choclo are a traditional Colombian and Venezuelan dish made with sweet corn. They are crispy on the outside and soft on the inside, and are perfect for breakfast, lunch, or dinner.
Ingredients - Serves 6
- Oil - 2 tablespoons
- Queso fresco - 1 cup, crumbled
- Salt - 1/2 teaspoon
- Sugar - 1 tablespoon
- Butter - 2 tablespoons
- Milk - 1/2 cup
- Masa harina - 1 cup
- Sweet corn kernels - 2 cups
Let's Get Started
- In a blender, puree the sweet corn kernels with the milk and butter until smooth.
- In a mixing bowl, combine the masa harina, sugar, and salt.
- Add the pureed corn mixture to the masa harina mixture and stir until well combined.
- Fold in the crumbled queso fresco.
- Form the dough into 6 equal-sized balls.
- Flatten each ball into a patty about 1/2 inch thick.
- Heat the oil in a large skillet over medium heat.
- Add the arepas to the skillet and cook for 5-7 minutes on each side, or until golden brown and crispy.
- Serve hot with butter or more queso fresco.
