  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. Add the cold cubed butter to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.
  4. Stir in the chopped dried apricots.
  5. In a separate bowl, whisk together the milk, vanilla extract, and egg.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined.
  7. Transfer the dough onto a lightly floured surface and gently knead it a few times until it comes together.
  8. Shape the dough into a circle about 1-inch thick.
  9. Cut the dough into 8 wedges and place them on the prepared baking sheet.
  10. Sprinkle the tops of the scones with turbinado sugar.
  11. Bake for 18-20 minutes, or until the scones are golden brown.
  12. Allow the scones to cool slightly before serving.
