Fois Gras Creme Brulee
This luxurious dessert combines the richness of foie gras with the sweet crunch of a classic crème brûlée.
Ingredients - Serves 4
- Turbinado sugar - 4 tablespoons
- Vanilla extract - 1 teaspoon
- Salt - 1/4 teaspoon
- Sugar - 1/2 cup
- Egg yolks - 6
- Heavy cream - 2 cups
- Foie gras - 200 grams
Let's Get Started
- Preheat the oven to 325°F.
- In a blender, combine the foie gras, heavy cream, egg yolks, sugar, salt, and vanilla extract. Blend until smooth.
- Pour the mixture into four ramekins.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake for 40-45 minutes, or until the custards are set but still slightly wobbly in the center.
- Remove the ramekins from the water bath and let cool to room temperature.
- Refrigerate for at least 2 hours, or until chilled.
- Before serving, sprinkle 1 tablespoon of turbinado sugar over each custard.
- Use a kitchen torch to caramelize the sugar until it's golden and bubbly.
- Let the crème brûlées sit for a few minutes to allow the sugar to harden before serving.
