Apricot Crumble Fried Rice

Ingredients - Serves 4
- Butter - 4 tablespoons, cold
- Brown sugar - 1/4 cup
- Flour - 1/2 cup
- Cashews - 1/2 cup, chopped
- Green onions - 4, sliced
- Eggs - 2, beaten
- Sesame oil - 1 tablespoon
- Soy sauce - 3 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1, finely chopped
- Apricots - 1 cup, diced
- Cooked rice - 4 cups
Let's Get Started
- In a large skillet, heat some oil over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant and the onion is translucent.
- Add the diced apricots and cook for another 2 minutes.
