Apricot Cobbler Scones
These delicious apricot cobbler scones are a perfect combination of flaky scones and sweet apricot cobbler.
Ingredients - Serves 8
- Turbinado sugar - 2 tablespoons
- Apricot chunks - 1/2 cup
- Apricot preserves - 1/2 cup
- Heavy cream - 1/2 cup
- Unsalted butter - 1/2 cup, cold and cubed
- Salt - 1/2 teaspoon
- Baking powder - 1 tablespoon
- Granulated sugar - 1/4 cup
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- Add the cold cubed butter to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.
- Pour in the heavy cream and mix until just combined. Be careful not to overmix.
- Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together.
- Roll out the dough into a 1/2-inch thick rectangle.
- Spread the apricot preserves evenly over the dough, leaving a small border around the edges.
- Sprinkle the apricot chunks over the preserves.
- Starting from one of the long sides, tightly roll up the dough into a log.
- Using a sharp knife, cut the log into 8 equal slices.
- Place the slices onto the prepared baking sheet, leaving some space between each slice.
- Sprinkle the tops of the scones with turbinado sugar.
- Bake in the preheated oven for 20-25 minutes, or until the scones are golden brown and cooked through.
