Apricot Cobbler Lasagna
This unique twist on traditional lasagna combines the flavors of apricot cobbler with layers of pasta and creamy cheese.
Ingredients - Serves 8
- Graham cracker crumbs - 1 cup
- Vanilla extract - 1 teaspoon
- Whipped cream - 1 cup
- Cream cheese - 8 ounces, softened
- Lasagna noodles - 12 sheets, cooked according to package instructions
- Cinnamon - 1 teaspoon
- Lemon juice - 1 tablespoon
- Cornstarch - 2 tablespoons
- Sugar - 1 cup
- Apricots - 4 cups, pitted and sliced
Let's Get Started
- Preheat the oven to 350°F.
- In a saucepan, combine the apricots, sugar, cornstarch, lemon juice, and cinnamon. Cook over medium heat until the mixture thickens, stirring constantly.
- In a separate bowl, mix the softened cream cheese, whipped cream, and vanilla extract until smooth.
- Spread a thin layer of the apricot mixture on the bottom of a baking dish.
- Place a layer of cooked lasagna noodles on top of the apricot mixture.
- Spread a layer of the cream cheese mixture over the noodles.
- Repeat the layers of apricot mixture, noodles, and cream cheese mixture until all ingredients are used, ending with a layer of cream cheese mixture on top.
- Sprinkle the graham cracker crumbs evenly over the top layer.
- Bake for 30-35 minutes, or until the cobbler lasagna is golden and bubbly.
- Allow to cool slightly before serving. Serve warm or at room temperature.
