Let's Get Started

  1. Preheat the oven to 325°F.
  2. In a bowl, combine the graham cracker crumbs and melted butter. Press into the bottom of a springform pan to form the crust.
  3. In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. Bake for 50 minutes, or until the center is set.
  6. While the cheesecake is baking, combine the guava paste and water in a saucepan over medium heat. Stir until the guava paste is melted and the mixture is smooth.
  7. Remove the cheesecake from the oven and let it cool for 10 minutes. Spread the guava mixture over the top of the cheesecake.
  8. Return the cheesecake to the oven and bake for an additional 10 minutes.
  9. Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 4 hours before serving.
