Romeu E Julieta Cheesecake
A delicious cheesecake inspired by the classic Brazilian dessert, Romeu e Julieta, which is a combination of guava paste and cheese.
Ingredients - Serves 8
- Water - 1/4 cup
- Guava paste - 1 cup
- Butter - 1/2 cup, melted
- Graham cracker crumbs - 1 1/2 cups
- Vanilla extract - 1 teaspoon
- Eggs - 3
- Sugar - 1 cup
- Cream cheese - 3 cups
Let's Get Started
- Preheat the oven to 325°F.
- In a bowl, combine the graham cracker crumbs and melted butter. Press into the bottom of a springform pan to form the crust.
- In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 50 minutes, or until the center is set.
- While the cheesecake is baking, combine the guava paste and water in a saucepan over medium heat. Stir until the guava paste is melted and the mixture is smooth.
- Remove the cheesecake from the oven and let it cool for 10 minutes. Spread the guava mixture over the top of the cheesecake.
- Return the cheesecake to the oven and bake for an additional 10 minutes.
- Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 4 hours before serving.
