Apple Stuffed Pork Loin with Cider Sauce

- Olive oil - 2 tablespoons
- Butter - 2 tablespoons
- Chicken broth - 1 cup
- Apple cider - 1 cup
- Bread crumbs - 1 cup
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Apples - 2, peeled and diced
- Pork loin - 1 (3 pound)
Let's Get Started
- Preheat the oven to 375°F.
- In a skillet, melt the butter over medium heat. Add the onions, apples, and garlic, and cook until softened.
- Remove from heat and stir in the bread crumbs. Season with salt and pepper.
- Cut a pocket into the pork loin and stuff with the apple mixture. Secure with toothpicks or kitchen twine.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the pork loin and sear on all sides until browned.
- Transfer the skillet to the oven and roast for about 60 minutes, or until the pork is cooked through.
- Remove the pork from the skillet and let rest. In the meantime, add the apple cider and chicken broth to the skillet and bring to a boil over high heat. Reduce the heat and simmer until the sauce has reduced by half.
- Slice the pork and serve with the cider sauce.
