Apple Stuffed Pork Loin with Cider Sauce

  1. Preheat the oven to 375°F.
  2. In a skillet, melt the butter over medium heat. Add the onions, apples, and garlic, and cook until softened.
  3. Remove from heat and stir in the bread crumbs. Season with salt and pepper.
  4. Cut a pocket into the pork loin and stuff with the apple mixture. Secure with toothpicks or kitchen twine.
  5. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the pork loin and sear on all sides until browned.
  6. Transfer the skillet to the oven and roast for about 60 minutes, or until the pork is cooked through.
  7. Remove the pork from the skillet and let rest. In the meantime, add the apple cider and chicken broth to the skillet and bring to a boil over high heat. Reduce the heat and simmer until the sauce has reduced by half.
  8. Slice the pork and serve with the cider sauce.
