Let's Get Started

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the andouillette sausages and cook until browned on all sides, about 10 minutes.
  3. Remove the sausages from the skillet and set aside.
  4. In the same skillet, add the onions and garlic and cook until softened, about 5 minutes.
  5. Add the white wine to the skillet and bring to a simmer.
  6. Return the sausages to the skillet, cover, and simmer for 45 minutes.
  7. Serve the andouillette with a generous spoonful of Dijon mustard on the side.
