Andouillette
Andouillette is a coarse-grained sausage made with pork intestines, pepper, wine, onions, and seasonings. It's a traditional French dish that's often served with mustard and a side of fries.

- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Onions - 2, thinly sliced
- Dijon mustard - 4 tablespoons
- White wine - 1 cup
- Andouillette sausages - 4
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the andouillette sausages and cook until browned on all sides, about 10 minutes.
- Remove the sausages from the skillet and set aside.
- In the same skillet, add the onions and garlic and cook until softened, about 5 minutes.
- Add the white wine to the skillet and bring to a simmer.
- Return the sausages to the skillet, cover, and simmer for 45 minutes.
- Serve the andouillette with a generous spoonful of Dijon mustard on the side.
