Ingredients - Serves 4

Let's Get Started

  1. In a large skillet, cook the pancetta over medium heat until crispy. Remove from the skillet and set aside.
  2. In the same skillet, add the chopped onion and minced garlic. Cook until the onion is translucent.
  3. Add the canned tomatoes and red chili flakes to the skillet. Break up the tomatoes with a spoon.
  4. Season with salt and black pepper to taste. Simmer the sauce for about 20 minutes.
  5. Meanwhile, cook the spaghetti according to package instructions until al dente. Drain and set aside.
  6. Add the cooked pancetta back to the skillet and stir to combine with the sauce.
  7. Add the cooked spaghetti to the skillet and toss until well coated with the sauce.
  8. Serve the amatriciana sauce pasta hot, garnished with grated pecorino cheese and fresh parsley.
