Amatriciana Sauce
Amatriciana sauce is a classic Italian pasta sauce made with tomatoes, pancetta, onions, and pecorino cheese.
Ingredients - Serves 4
- Fresh parsley - For garnish
- Spaghetti - 320 grams
- Pecorino cheese - 1/2 cup, grated
- Black pepper - To taste
- Salt - To taste
- Red chili flakes - 1 teaspoon
- Canned tomatoes - 400 grams
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Pancetta - 150 grams, diced
Let's Get Started
- In a large skillet, cook the pancetta over medium heat until crispy. Remove from the skillet and set aside.
- In the same skillet, add the chopped onion and minced garlic. Cook until the onion is translucent.
- Add the canned tomatoes and red chili flakes to the skillet. Break up the tomatoes with a spoon.
- Season with salt and black pepper to taste. Simmer the sauce for about 20 minutes.
- Meanwhile, cook the spaghetti according to package instructions until al dente. Drain and set aside.
- Add the cooked pancetta back to the skillet and stir to combine with the sauce.
- Add the cooked spaghetti to the skillet and toss until well coated with the sauce.
- Serve the amatriciana sauce pasta hot, garnished with grated pecorino cheese and fresh parsley.
