Almond Horchata

Ingredients - Serves 6

Let's Get Started

  1. Combine the almonds, rice, and cinnamon stick in a bowl. Cover with 2 cups of the water and let soak overnight.
  2. The next day, remove the cinnamon stick and blend the mixture until smooth.
  3. Strain the mixture through a fine-mesh sieve into a pitcher, pressing on the solids to extract as much liquid as possible.
  4. Stir in the sugar, vanilla, and the remaining 2 cups of water.
  5. Chill the horchata in the refrigerator until ready to serve. Stir well before serving over ice.
