Almond Horchata
A refreshing and creamy Mexican drink made with almonds and rice.
Ingredients - Serves 6
- Vanilla extract - 1 teaspoon
- Sugar - 1/2 cup
- Water - 4 cups
- Cinnamon stick - 1
- Long-grain white rice - 1/3 cup
- Almonds - 1 cup, blanched
Let's Get Started
- Combine the almonds, rice, and cinnamon stick in a bowl. Cover with 2 cups of the water and let soak overnight.
- The next day, remove the cinnamon stick and blend the mixture until smooth.
- Strain the mixture through a fine-mesh sieve into a pitcher, pressing on the solids to extract as much liquid as possible.
- Stir in the sugar, vanilla, and the remaining 2 cups of water.
- Chill the horchata in the refrigerator until ready to serve. Stir well before serving over ice.
