Almond Biscotti
These crunchy Italian cookies are perfect for dipping in coffee or tea.
Ingredients - Serves 24
- Almonds - 1 cup, chopped
- Eggs - 2
- Sugar - 1 cup
- Butter - 1/2 cup, softened
- Salt - 1/4 teaspoon
- Baking powder - 1 1/2 teaspoons
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 350°F.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the flour mixture and almonds until well combined.
- Divide the dough in half and shape each half into a log about 12 inches long and 2 inches wide.
- Place the logs on a baking sheet lined with parchment paper and bake for 25 minutes, or until lightly golden brown.
- Remove from the oven and let cool for 10 minutes.
- Using a serrated knife, slice the logs into 1/2-inch thick slices.
- Place the slices cut-side down on the baking sheet and bake for an additional 20-25 minutes, or until golden brown and crisp.
- Let cool completely before serving.
