Albóndigas en Chipotle is a traditional Mexican dish of meatballs in a spicy chipotle sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Chicken broth - 4 cups
- Tomatoes - 4, chopped
- Chipotle peppers in adobo sauce - 2, chopped
- Onion - 1, finely chopped
- Garlic - 2 cloves, minced
- Egg - 1
- Rice - 1/2 cup, uncooked
- Ground beef - 1 pound
Let's Get Started
- In a large bowl, combine the ground beef, rice, egg, half of the garlic, and half of the onion. Season with salt and pepper.
- Form the mixture into meatballs and set aside.
- In a blender, combine the chipotle peppers, tomatoes, and the remaining garlic and onion. Blend until smooth.
- In a large pot, bring the chicken broth to a boil.
- Add the meatballs to the pot and cook for 20 minutes.
- Add the chipotle sauce to the pot and simmer for another 20 minutes.
- Serve the Albóndigas en Chipotle with warm tortillas or rice.
