  1. In a large bowl, combine the ground beef, rice, egg, half of the garlic, and half of the onion. Season with salt and pepper.
  2. Form the mixture into meatballs and set aside.
  3. In a blender, combine the chipotle peppers, tomatoes, and the remaining garlic and onion. Blend until smooth.
  4. In a large pot, bring the chicken broth to a boil.
  5. Add the meatballs to the pot and cook for 20 minutes.
  6. Add the chipotle sauce to the pot and simmer for another 20 minutes.
  7. Serve the Albóndigas en Chipotle with warm tortillas or rice.
