- Chicken broth - 2 cups
- Tomato sauce - 2 cups

- Cilantro - 2 tablespoons, chopped
- Egg - 1
- Garlic - 2 cloves, minced
- Onion - 1/2 medium, finely chopped
- Bread crumbs - 1/2 cup
- Ground beef - 1 pound
Let's Get Started
- In a large bowl, combine the ground beef, bread crumbs, onion, garlic, egg, cilantro, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- Shape the mixture into small meatballs, about 1 inch in diameter.
- Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes. Remove the meatballs from the skillet and set aside.
- In the same skillet, add the tomato sauce, chicken broth, dried oregano, cumin, bay leaf, salt, and pepper. Stir well to combine.
- Bring the sauce to a simmer and return the meatballs to the skillet. Cover and cook for 30 minutes, or until the meatballs are cooked through and the sauce has thickened.
- Serve the Albondigas en Salsa hot, garnished with fresh cilantro. Enjoy!
