Air Fryer Veggie Burgers
These delicious and healthy veggie burgers are made with a variety of vegetables and cooked to perfection in an air fryer.
Ingredients - Serves 4
- Sauce of your choice (e.g. ketchup, mayo, mustard) - To taste
- Avocado - 1, sliced
- Tomato - 1, sliced
- Lettuce - 4 leaves
- Whole wheat burger buns - 4
- Salt and pepper - To taste
- Paprika - 1/2 teaspoon
- Cumin - 1 teaspoon
- Egg - 1
- Breadcrumbs - 1/2 cup
- Garlic - 2 cloves, minced
- Onion - 1/2, finely chopped
- Red bell pepper - 1/2, finely chopped
- Carrot - 1 medium, grated
- Zucchini - 1 medium, grated
- Quinoa - 1/2 cup, cooked
- Black beans - 1 can, drained and rinsed
Let's Get Started
- In a large bowl, mash the black beans with a fork or potato masher.
- Add the cooked quinoa, grated zucchini, grated carrot, chopped red bell pepper, chopped onion, minced garlic, breadcrumbs, egg, cumin, paprika, salt, and pepper to the bowl. Mix well to combine.
- Form the mixture into 4 patties, about 1/2 inch thick.
- Preheat the air fryer to 375°F.
- Place the veggie burger patties in the air fryer basket, leaving space between each patty.
- Cook the veggie burgers in the air fryer for 10 minutes, then flip them over and cook for an additional 10 minutes, or until they are golden brown and crispy.
- While the veggie burgers are cooking, toast the burger buns if desired.
- Assemble the burgers by placing a veggie burger patty on the bottom half of each bun. Top with lettuce, tomato, avocado, and your choice of sauce.
- Serve the air fryer veggie burgers with a side of sweet potato fries or a fresh salad.
