Air Fryer Veggie Burgers

Ingredients - Serves 4

Let's Get Started

  1. In a large bowl, mash the black beans with a fork or potato masher.
  2. Add the cooked quinoa, grated zucchini, grated carrot, chopped red bell pepper, chopped onion, minced garlic, breadcrumbs, egg, cumin, paprika, salt, and pepper to the bowl. Mix well to combine.
  3. Form the mixture into 4 patties, about 1/2 inch thick.
  4. Preheat the air fryer to 375°F.
  5. Place the veggie burger patties in the air fryer basket, leaving space between each patty.
  6. Cook the veggie burgers in the air fryer for 10 minutes, then flip them over and cook for an additional 10 minutes, or until they are golden brown and crispy.
  7. While the veggie burgers are cooking, toast the burger buns if desired.
  8. Assemble the burgers by placing a veggie burger patty on the bottom half of each bun. Top with lettuce, tomato, avocado, and your choice of sauce.
  9. Serve the air fryer veggie burgers with a side of sweet potato fries or a fresh salad.
