Ai Yu Jelly
Ai Yu Jelly is a refreshing, sweet dessert popular in Taiwan and Singapore. It's made from the gel from the seeds of a variety of fig found in Taiwan and East Asian countries.
Ingredients - Serves 4
- Sugar - To taste
- Lemon - 1, juiced
- Water - 1 liter
- Ai yu jelly powder - 1 packet
Let's Get Started
- Dissolve the Ai Yu Jelly powder in a little bit of cold water.
- Bring the liter of water to a boil in a pot.
- Once boiling, add the dissolved Ai Yu Jelly powder to the pot and stir well.
- Turn off the heat and let the mixture cool to room temperature.
- Once cooled, place the pot in the refrigerator and let it chill for at least 2 hours, or until the jelly is set.
- Once the jelly is set, cut it into cubes or scoop it out with a melon baller.
- Serve the jelly in bowls, topped with the lemon juice and sugar to taste.
