Aebleskiver
Aebleskiver are traditional Danish pancake balls, typically served with powdered sugar and jam.
Ingredients - Serves 4
- Jam - For serving
- Powdered sugar - For dusting
- Unsalted butter - 2 tablespoons, melted
- Vanilla extract - 1 teaspoon
- Buttermilk - 1 cup
- Egg - 1
- Salt - 1/2 teaspoon
- Baking powder - 1 teaspoon
- Granulated sugar - 2 tablespoons
- All-purpose flour - 1 1/2 cups
Let's Get Started
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the egg, buttermilk, vanilla extract, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Preheat an aebleskiver pan over medium heat and lightly grease each well with butter or cooking spray.
- Fill each well with batter, filling it about 3/4 full.
- Cook for 2-3 minutes, or until the edges start to set and become golden brown.
- Using a skewer or fork, carefully flip each aebleskiver over and cook for an additional 2-3 minutes, until cooked through and golden brown on all sides.
- Transfer the cooked aebleskiver to a plate and repeat with the remaining batter.
- Serve the aebleskiver warm, dusted with powdered sugar and accompanied by jam for dipping.
