Ingredients - Serves 4

Let's Get Started

  1. Wash the rice and lentils separately under cold water.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown.
  3. Add the ground cumin, turmeric, cinnamon, and salt to the pot. Stir well to combine.
  4. Add the lentils to the pot and sauté for a few minutes.
  5. Add the water to the pot and bring to a boil. Reduce the heat to low, cover the pot, and let the lentils cook for about 15 minutes or until tender.
  6. In a separate pot, bring water to a boil and add the washed rice. Cook the rice until it is parboiled (partially cooked). Drain the rice and set aside.
  7. In a non-stick pot or rice cooker, layer the parboiled rice and lentil mixture. Start with a layer of rice, followed by a layer of lentils, and repeat until all the rice and lentils are used.
  8. Cover the pot with a tight-fitting lid and cook on low heat for about 30 minutes, or until the rice is fully cooked and fluffy.
  9. In a small pan, heat a tablespoon of vegetable oil and sauté the raisins until they plump up.
  10. Serve the Adas Polo hot, garnished with the sautéed raisins.
