Adas Polo
Adas Polo is a delicious Persian rice dish made with lentils, raisins, and aromatic spices.
Ingredients - Serves 4
- Water - 4 cups
- Vegetable oil - 2 tablespoons
- Salt - To taste
- Ground cinnamon - 1/2 teaspoon
- Ground turmeric - 1/2 teaspoon
- Ground cumin - 1 teaspoon
- Raisins - 1/2 cup
- Onion - 1 large, finely chopped
- Lentils - 1 cup
- Basmati rice - 2 cups
Let's Get Started
- Wash the rice and lentils separately under cold water.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown.
- Add the ground cumin, turmeric, cinnamon, and salt to the pot. Stir well to combine.
- Add the lentils to the pot and sauté for a few minutes.
- Add the water to the pot and bring to a boil. Reduce the heat to low, cover the pot, and let the lentils cook for about 15 minutes or until tender.
- In a separate pot, bring water to a boil and add the washed rice. Cook the rice until it is parboiled (partially cooked). Drain the rice and set aside.
- In a non-stick pot or rice cooker, layer the parboiled rice and lentil mixture. Start with a layer of rice, followed by a layer of lentils, and repeat until all the rice and lentils are used.
- Cover the pot with a tight-fitting lid and cook on low heat for about 30 minutes, or until the rice is fully cooked and fluffy.
- In a small pan, heat a tablespoon of vegetable oil and sauté the raisins until they plump up.
- Serve the Adas Polo hot, garnished with the sautéed raisins.
