Zuivan

Zuivan is a traditional Mongolian dish made with lamb, vegetables, and spices.

Ingredients

  • Fresh cilantro - For garnish
  • Water - 4 cups
  • Vegetable oil - 2 tablespoons
  • Salt and pepper - To taste
  • Coriander - 1 teaspoon
  • Cumin - 1 teaspoon
  • Ginger - 1 tablespoon, grated
  • Garlic - 4 cloves, minced
  • Potatoes - 4, peeled and diced
  • Carrots - 2, sliced
  • Onion - 1 large, chopped
  • Lamb - 1 kg, cut into cubes

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the lamb cubes and cook until browned on all sides.
  3. Add the chopped onion, sliced carrots, minced garlic, and grated ginger. Cook for 5 minutes, until the vegetables are slightly softened.
  4. Add the cumin, coriander, salt, and pepper. Stir well to coat the lamb and vegetables with the spices.
  5. Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 2 hours, or until the lamb is tender.
  6. Add the diced potatoes and continue to simmer for another 30 minutes, or until the potatoes are cooked through.
  7. Taste and adjust the seasoning if needed.
  8. Serve the zuivan hot, garnished with fresh cilantro.
