Shiltgeen Soup

Shiltgeen soup is a traditional Mongolian soup made with lamb, vegetables, and spices.

Ingredients

  • Fresh cilantro - For garnish
  • Water - 6 cups
  • Salt and pepper - To taste
  • Coriander - 1 teaspoon
  • Cumin - 1 teaspoon
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Cabbage - 1/2 head, shredded
  • Potatoes - 2, diced
  • Carrots - 2, sliced
  • Onion - 1 large, chopped
  • Lamb - 1 lb, cut into small pieces

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the lamb pieces and cook until browned on all sides.
  3. Add the chopped onion, sliced carrots, diced potatoes, shredded cabbage, minced garlic, and grated ginger. Cook for 5 minutes, stirring occasionally.
  4. Add the cumin, coriander, salt, and pepper. Stir well to coat the ingredients with the spices.
  5. Pour in the water and bring to a boil. Reduce the heat and simmer for 45 minutes, or until the lamb is tender and the vegetables are cooked through.
  6. Taste and adjust the seasoning if needed.
  7. Serve the shiltgeen soup hot, garnished with fresh cilantro.
