Zucchini and Corn Salad

This refreshing zucchini and corn salad is packed with fresh vegetables and tossed in a tangy vinaigrette.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Fresh cilantro - 1/4 cup, chopped
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Corn kernels - 1 cup, cooked
  • Zucchini - 2 medium, thinly sliced

Instructions

  1. In a large bowl, combine the zucchini, corn kernels, cherry tomatoes, red onion, and cilantro.
