Corn and Lentil Salad

This refreshing corn and lentil salad is packed with flavors and nutrients.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Fresh cilantro - 1/4 cup, chopped
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Cucumber - 1, diced
  • Red bell pepper - 1, diced
  • Lentils - 1 cup, cooked
  • Corn kernels - 2 cups, cooked

Instructions

  1. In a large bowl, combine the cooked corn kernels, lentils, red bell pepper, cucumber, cherry tomatoes, red onion, and fresh cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Refrigerate for at least 30 minutes to allow the flavors to meld together.
