Corn and Tuna Salad

This refreshing corn and tuna salad is packed with flavors and makes for a perfect summer dish.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Fresh cilantro - 1/4 cup, chopped
  • Red onion - 1/4 cup, finely chopped
  • Cucumber - 1, diced
  • Red bell pepper - 1, diced
  • Corn kernels - 1 cup, cooked
  • Canned tuna - 2 cans, drained

Instructions

  1. In a large bowl, combine the drained tuna, corn kernels, diced red bell pepper, diced cucumber, finely chopped red onion, and chopped fresh cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad ingredients and toss gently to combine.
  4. Refrigerate for at least 30 minutes to allow the flavors to meld together.
