Western Scramble

Western Scramble

A hearty breakfast dish with eggs, bell peppers, onions, and ham, topped with cheddar cheese.

Ingredients

  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Cheddar cheese - 1 cup, shredded
  • Ham - 1 cup, diced
  • Onion - 1, diced
  • Bell peppers - 2, diced
  • Eggs - 8

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the bell peppers and onion and cook until softened, about 5 minutes.
  3. Add the ham and cook until heated through, about 2 minutes.
  4. In a separate bowl, beat the eggs and season with salt and pepper.
  5. Pour the eggs over the ham and vegetables in the skillet.
  6. Cook, stirring occasionally, until the eggs are scrambled and fully cooked, about 5 minutes.
  7. Sprinkle the cheese over the top of the eggs and cover the skillet. Let sit for a minute or two until the cheese is melted.
  8. Serve the scramble hot, with toast or hash browns on the side if desired.
