This refreshing Vietnamese Green Mango Salad is a perfect light dish for hot summer days. It's a little sweet, a little sour, and full of flavor.

Ingredients

  • Red chili - 1, finely chopped
  • Sugar - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Fish sauce - 2 tablespoons
  • Roasted peanuts - 1/4 cup, crushed
  • Fresh cilantro leaves - 1/2 cup
  • Fresh mint leaves - 1/2 cup
  • Red onion - 1 small, thinly sliced
  • Carrot - 1 large, peeled and julienned
  • Green mangoes - 2, peeled and julienned

Instructions

  1. In a large bowl, combine the julienned green mangoes, carrot, red onion, mint leaves, and cilantro.
  2. In a small bowl, whisk together the fish sauce, lime juice, sugar, and chopped chili until the sugar is fully dissolved.
  3. Pour the dressing over the salad and toss well to combine.
  4. Sprinkle the salad with the crushed peanuts before serving.
